- 2 1/2 c. all-purpose flour
- 1 1/4 c. sugar
- 1 Tbsp. cinnamon
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. oil
- 1/2 c. milk
- 3 beaten eggs
- 1 Tbsp. vanilla
- 2 c. shredded carrots
- 1 c. chopped nuts
Directions

1Mix all ingredients together; stir just until combined.

2Pour into 2 greased loaf pans.

3Bake in a 350° oven for 40 to 50 minutes.

4Remove from pan; cool on a wire rack.

5Wrap and store overnight.
