- 1 1/2 cups flour
- 1 1/2 cups carrots, shredded
- 3/4 cup granulated sugar
- 2 teaspoons cinnamon
- 1 1/2 teaspoons baking soda
- 1/4 teaspoon salt
- 3/4 cup water
- 2 eggs
- 2 tablespoons olive oil
- 1 teaspoon vanilla extract
Directions

1Preheat oven to 350 degrees.

2Prepare 8x5 loaf pan with cooking spray; set aside.

3Combine flour, carrots, sugar, cinnamon, baking soda & salt.

4Add water, eggs, oil & vanilla. Mix until moistened.

5Pour batter into prepared loaf pan.

6Bake for 1 hour or until toothpick inserted in center comes out clean.
