Ingredients

  • 2 c. sugar
  • 3 eggs
  • 1 c. plus 2 Tbsp. salad oil
  • 3 c. flour
  • 1 tsp. soda
  • 3/4 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 3 tsp. vanilla
  • 13 1/2 oz. can crushed pineapple
  • 2 c. raw shredded carrots

    Mix together the sugar and eggs.

    Then blend well along with the

    Add dry ingredients

    oil mixture.

    Then add vanilla, pineapple (do not drain) and carrots.

    Combine all these ingredients and mix well. Pour into greased and floured bread pans.

    Bake at 325° for 50 to 53 minutes. Makes 3 layers.
