Ingredients

  • 1 1/2 c. flour
  • 1 1/4 c. sugar
  • 1 1/2 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 1/4 tsp. salt
  • 2 (4 1/2 oz.) jars strained baby carrots
  • 2/3 c. oil
  • 2 eggs, beaten
  • 1/2 tsp. vanilla
  • 2/3 c. coconut
  • 1 can (8 oz.) crushed pineapple, drained
  • 1/2 c. chopped walnuts

Directions

    Mix flour, sugar, soda, cinnamon and salt.

    Add carrots, oil, eggs and vanilla.

    Mix well.

    Add pineapple, coconut and walnuts. Makes 9 inch square pan (for 9 x 13, double recipe).

    Bake in preheated oven at 350° for 40 to 45 minutes or until toothpick comes out clean.

    Cool.
