- 1 1/2 c. flour
- 1 1/4 c. sugar
- 1 1/2 tsp. baking soda
- 1 1/2 tsp. cinnamon
- 1/4 tsp. salt
- 2 (4 1/2 oz.) jars strained baby carrots
- 2/3 c. oil
- 2 eggs, beaten
- 1/2 tsp. vanilla
- 2/3 c. coconut
- 1 can (8 oz.) crushed pineapple, drained
- 1/2 c. chopped walnuts
Directions

1Mix flour, sugar, soda, cinnamon and salt.

2Add carrots, oil, eggs and vanilla.

3Mix well.

4Add pineapple, coconut and walnuts. Makes 9 inch square pan (for 9 x 13, double recipe).

5Bake in preheated oven at 350° for 40 to 45 minutes or until toothpick comes out clean.

6Cool.
