  • 2 c. all-purpose flour
  • 2 c. sugar
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 c. plus 1 Tbsp. cooking oil
  • 4 eggs
  • 3 c. grated carrots
  • 1 tsp. cinnamon

    Sift together flour, sugar, baking soda and salt.

    Beat in oil and eggs, one at a time.

    Stir in carrots and cinnamon. Bake at 350° for 30 to 40 minutes.
