- 1 yellow cake mix
- 1 (8 oz.) can crushed pineapple, undrained
- 3 eggs
- 1/2 c. finely chopped pecans
- 2 c. freshly grated carrots
- 1/2 c. water
- 1/2 c. vegetable oil
- 2 tsp. cinnamon
Directions

1Combine cake mix, carrots, pineapple, water, eggs, oil, pecans and cinnamon in a large bowl.

2Beat at low speed until moistened. Beat at medium speed for 2 minutes.

3Pour into 9 x 13-inch pan. Bake in a preheated oven at 350° for 35 to 40 minutes.
