  • 1 yellow cake mix
  • 1 (8 oz.) can crushed pineapple, undrained
  • 3 eggs
  • 1/2 c. finely chopped pecans
  • 2 c. freshly grated carrots
  • 1/2 c. water
  • 1/2 c. vegetable oil
  • 2 tsp. cinnamon

Directions

    Combine cake mix, carrots, pineapple, water, eggs, oil, pecans and cinnamon in a large bowl.

    Beat at low speed until moistened. Beat at medium speed for 2 minutes.

    Pour into 9 x 13-inch pan. Bake in a preheated oven at 350° for 35 to 40 minutes.
