- 3 c. grated carrots, coarsely grated
- 1 tsp. vanilla
- 1 1/4 c. corn oil
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 1 tsp. baking powder
- 2 tsp. soda
Directions

1Mix all dry ingredients and carrots together.

2Add oil, eggs and vanilla and blend well.

3Bake at 350° in three 9-inch pans or one 9 x 13 pan.
