  • 2 c. flour
  • 2 c. sugar
  • 4 eggs
  • 3 c. grated carrots, coarsely grated
  • 1 tsp. vanilla
  • 1 1/4 c. corn oil
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 2 tsp. soda

Directions

    Mix all dry ingredients and carrots together.

    Add oil, eggs and vanilla and blend well.

    Bake at 350° in three 9-inch pans or one 9 x 13 pan.
