  • 3 c. plain flour
  • 2 c. sugar
  • 3 eggs, beaten
  • 2 tsp. baking powder
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 2 c. shredded carrots
  • 1 c. chopped nuts
  • 1 small can crushed pineapple, drained
  • 1 1/2 c. Wesson oil
  • 2 tsp. cinnamon
  • 2 tsp. vanilla

Directions

    Mix all ingredients together.

    Mix eggs, oil, vanilla and pineapple.

    Combine with dry ingredients.

    Add nuts and carrots. Bake in three 9-inch pans at 350° for 35 minutes or until done.
