- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 c. plain nonfat yogurt
- 1 (8 oz.) can crushed pineapple, drained
- 1/3 c. Egg Beaters
- 1/4 c. canola oil
- 3 c. shredded raw carrots
- 3/4 c. raisins, softened in water
- 1/2 c. chopped walnuts
Directions

1Sift first 6 ingredients.

2Stir yogurt, pineapple, Egg Beaters and oil into flour mixture.

3Stir in raisins, carrots and walnuts. Pour batter into floured 13 x 9-inch pan.

4Bake 40 to 45 minutes at 375°.
