  • 2 c. all-purpose flour
  • 2 c. sugar
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. plain nonfat yogurt
  • 1 (8 oz.) can crushed pineapple, drained
  • 1/3 c. Egg Beaters
  • 1/4 c. canola oil
  • 3 c. shredded raw carrots
  • 3/4 c. raisins, softened in water
  • 1/2 c. chopped walnuts

    Sift first 6 ingredients.

    Stir yogurt, pineapple, Egg Beaters and oil into flour mixture.

    Stir in raisins, carrots and walnuts. Pour batter into floured 13 x 9-inch pan.

    Bake 40 to 45 minutes at 375°.
