  • 4 eggs
  • 1 1/2 cup vegetable oil
  • 1 tsp. cinnamon
  • 2 cups self-rising flour
  • 2 cups sugar
  • 1 cup chopped pecans
  • 2 cups grated carrots

Directions

    Beat eggs and add oil.

    Add flour slowly with sugar and cinnamon.

    Add carrots and nuts.

    Put into 3 round cake pans, buttered and floured.

    Bake at 300° for 25 minutes to 30 minutes. Cool in pan 10 minutes.
