Ingredients

  • 2 c. sugar
  • 2 c. flour
  • 2 tsp. baking powder
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1 1/2 c. salad oil
  • 4 eggs, unbeaten
  • 2 c. grated carrots
  • 2 c. chopped nuts
  • 2 c. raisins, heated and floured

Directions

    Add first 8 ingredients as listed; beat for 8 minutes, then add carrots, nuts and raisins.

    Mix and bake in a tube pan at 350° for 1 hour and 10 minutes or until done.

    When cake is placed in oven, put shallow pan of water on rack under cake.
