- 2 tsp. soda
- 2 tsp. cinnamon
- 2 tsp. vanilla
- 1 tsp. salt
- 3 eggs
- 1 1/2 c. oil
- 1 small can crushed pineapple
- 2 c. carrots, grated
- 2 c. nuts, chopped
- 1 (7 oz.) bag coconut
- 2 c. sugar
Directions

1Cream sugar, oil and eggs.

2Add all dry ingredients.

3Then add carrots, pineapple and rest of ingredients.

4Pour into 3 cake pans (or make 2 loaves).

5Bake at 350° for 1 hour for loaves or for 45 minutes for pans.
