  • 2 1/2 c. flour
  • 2 tsp. soda
  • 2 tsp. cinnamon
  • 2 tsp. vanilla
  • 1 tsp. salt
  • 3 eggs
  • 1 1/2 c. oil
  • 1 small can crushed pineapple
  • 2 c. carrots, grated
  • 2 c. nuts, chopped
  • 1 (7 oz.) bag coconut
  • 2 c. sugar

Directions

    Cream sugar, oil and eggs.

    Add all dry ingredients.

    Then add carrots, pineapple and rest of ingredients.

    Pour into 3 cake pans (or make 2 loaves).

    Bake at 350° for 1 hour for loaves or for 45 minutes for pans.

    Check for doneness.
