- 4 eggs
- 1 1/4 c. vegetable oil
- 2 c. sugar
- 1 tsp. salt
- 2 c. all-purpose flour
- 2 tsp. baking powder
- 2 tsp. ground cinnamon
- 3 c. grated carrots
Directions

1Combine all ingredients except carrots.

2Beat until smooth, then add carrots.

3Pour batter into 2 greased and floured 9-inch round cake pans.

4Bake at 350° for 40 to 45 minutes or until toothpick comes out clean.

5Cool in pans 10 minutes, then remove from pans and let cool before icing.
