- 2 c. sugar
- 1 1/2 c. cooking oil
- 4 eggs
- 2 c. flour
- 2 tsp. baking soda
- 1 tsp. salt
- 2 tsp. cinnamon
- 4 heaping c. shredded carrots
- 1 1/2 c. chopped walnuts
Directions

1Cream together sugar and oil.

2Beat in eggs until fully incorporated.

3In another bowl, whisk together flour, baking soda, salt and cinnamon.

4Add dry ingredients to creamed mixture, blending well.

5Stir in carrots and walnuts.

6Bake in 15 x 10 x 2-inch greased pan at 300° for 1 hour.

7Ice when cool.
