- 2 cup flour
- 2 1/2 tsp baking soda
- 2 tsp cinnamon
- 1 tsp salt
- 2 cups sugar
- 1 cup vegetable oil
- 3 eggs, beaten
- 2 (15 oz) cans carrots, drained and mashed
- 1 8 oz can crushed pineapple
- 1 (1/3) cup coconut
- 1/2 cup pecans, chopped
- 1/2 cup walnuts, chopped
Directions

1In large bowl, mix together sugar and oil.

2Add eggs, mixing well. Add pineapple with juice, mashed carrots and coconut.

3Stir well. Add in flour, soda, cinnamon, salt, and nuts.

4Mix completely. Pour into greased 13 x 18 jelly roll pan.

5Bake at 350° for 25 minutes.

6Cool completely, then frost.
