Ingredients

  • 2 cup flour
  • 2 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp salt
  • 2 cups sugar
  • 1 cup vegetable oil
  • 3 eggs, beaten
  • 2 (15 oz) cans carrots, drained and mashed
  • 1 8 oz can crushed pineapple
  • 1 (1/3) cup coconut
  • 1/2 cup pecans, chopped
  • 1/2 cup walnuts, chopped

Directions

    In large bowl, mix together sugar and oil.

    Add eggs, mixing well. Add pineapple with juice, mashed carrots and coconut.

    Stir well. Add in flour, soda, cinnamon, salt, and nuts.

    Mix completely. Pour into greased 13 x 18 jelly roll pan.

    Bake at 350° for 25 minutes.

    Cool completely, then frost.
