Ingredients

  • 3 c. flour
  • 1 tsp. salt
  • 1 tsp. soda
  • 2 tsp. cinnamon
  • 1 1/2 c. oil or applesauce*
  • 2 c. sugar
  • 2 c. grated carrots
  • 1 1/2 c. chopped nuts (optional)
  • 1 can drained crushed pineapple*
  • 2 tsp. vanilla
  • 3 eggs

Directions

    Sift dry ingredients together.

    Combine oil and sugar; mix well.

    Add 1/2 the dry ingredients; mix well.

    Add vanilla, nuts, carrots and pineapple.

    Mix well.

    Add dry ingredients that remain and eggs, one at a time, mixing well after each addition.

    Pour into greased tube pan.

    Bake about 1 hour in 350° oven.
