- 3 c. grated carrots
- 1 1/3 c. oil
- 3/4 c. nuts, chopped
- 2 c. flour
- 2 tsp. baking soda
- 2 tsp. baking powder
- 3/4 c. crushed pineapple, drained
- 1/2 c. coconut
Directions

1Beat sugar and eggs until thick; stir in oil.

2Sift all dry ingredients together; stir into egg mixture.

3Fold carrots, nuts, pineapple and coconut into batter.

4Bake for 1 hour at 350°.
