  • 2 c. self-rising flour
  • 1 tsp. cinnamon
  • 1/2 tsp. soda
  • 4 eggs
  • 2 c. sugar
  • 1 1/2 c. oil
  • 3 c. grated carrots
  • 1 c. pecans

Directions

    Sift flour, cinnamon and soda.

    Beat eggs, sugar and oil with mixer.

    Add dry ingredients and beat well. Fold in carrots and pecans. Pour into 3 x 8-inch well-greased and floured pan. Bake at 350° for 30 to 35 minutes.
