- 4 eggs
- 1 c. sugar
- 1 1/2 c. Wesson oil
- 3 c. flour
- 2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1 tsp. salt
- 2 tsp. vanilla
- 2 c. grated raw carrots
- 1 can crushed pineapple (8 oz.)
- 1 c. chopped nuts
Directions

1Beat together eggs, oil and sugar.

2Add flour, baking powder, baking soda, salt and vanilla.

3Fold in carrots, pineapple (drained) and nuts.

4Beat well.

5Pour into cookie sheet, large one. Bake at 375° for 25 to 30 minutes.

6Frost hot cake with 1 small package of cream cheese, 1 1/2 cups powdered sugar and 1 teaspoon vanilla.

7Beat well.

8Sprinkle with nuts.
