Ingredients

  • 4 eggs
  • 1 c. sugar
  • 1 1/2 c. Wesson oil
  • 3 c. flour
  • 2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. vanilla
  • 2 c. grated raw carrots
  • 1 can crushed pineapple (8 oz.)
  • 1 c. chopped nuts

Directions

    Beat together eggs, oil and sugar.

    Add flour, baking powder, baking soda, salt and vanilla.

    Fold in carrots, pineapple (drained) and nuts.

    Beat well.

    Pour into cookie sheet, large one. Bake at 375° for 25 to 30 minutes.

    Frost hot cake with 1 small package of cream cheese, 1 1/2 cups powdered sugar and 1 teaspoon vanilla.

    Beat well.

    Sprinkle with nuts.
