- 2 1/2 c. all-purpose flour
- 2 c. sugar
- 2 tsp. baking soda
- 1/2 tsp. salt
- 2 tsp. ground cinnamon
- 3 c. finely shredded carrot
- 1 1/2 c. cooking oil
- 4 eggs
- 1 c. chopped pecans
Directions

1Combine flour, sugar, baking soda, salt and cinnamon in a large mixer bowl.

2Add carrot, oil and eggs.

3Beat with an electric mixer until combined.

4Stir in pecans.

5Pour batter into 3 greased and floured 9 x 1 1/2-inch round baking pans.

6Bake in a 350° oven for 25 to 30 minutes, or until a toothpick inserted near the centers comes out clean.

7Cool on wire racks for 10 minutes. Remove cakes from pans.

8Cool thoroughly on racks.
