  • CAKE
  • 2C. Flour
  • 2t. baking powder
  • 1 1/2 t. baking soda
  • 1t. salt
  • 2t. cinnamon
  • 2c. sugar
  • 1 1/2 c. salad oil
  • 4 eggs
  • 2c. grated carrots
  • 8 1/2 oz can of pineapple tidbits - (drained)
  • 1/2 c. nuts
  • 1/2 c. raisins
  • FROSTING
  • Cream:
  • 1/2 c. butter
  • 8oz cream cheese
  • 1t. vanilla
  • Beat in:
  • 1 pound powdered sugar
  • (If too thick, add a little milk)

Directions

    Sift the first five ingredients. Add sugar, oil, and eggs. Mix well. Add carrots and pineapple. Bake in greased and floured 9x13 cake pan.
