- 2 c. sugar
- 1 1/4 c. vegetable oil
- 4 eggs
- 2 1/4 c. flour
- 2 tsp. salt
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 4 c. grated carrots
- 1 1/2 c. chopped nuts
Directions

1Combine sugar, oil and eggs.

2Beat at medium speed for 2 minutes.

3Combine dry ingredients together; add to oil mixture and beat at low speed for 1 minute.

4Add grated carrots and nuts.

5Mix well.

6Bake at 350° for 30 to 35 minutes in round cake pans.

7Bake longer if in a 9 x 13-inch pan.
