- 3 eggs
- 1 1/4 c. sugar
- 3/4 c. brown sugar
- 3 c. flour
- 2 tsp. baking soda
- 1 tsp. salt
- 1 1/4 c. vegetable oil
- 2 tsp. cinnamon
- 2 c. grated carrot
- 1 c. walnuts, chopped
- 3 oz. orange juice
- 2 tsp. vanilla
- 1 1/2 c. raisins
Directions

1Combine eggs, sugars and oil in large bowl.

2Beat well. Combine flour, soda, salt and cinnamon.

3Add to sugar mixture and beat well.

4Stir in carrots, vanilla, raisins and walnuts.

5When well blended, pour into a greased 10-inch tube pan.

6Bake for one hour and 15 minutes in 350° oven or until toothpick comes out clean.

7Cool in pan 10 minutes.

8Remove from pan and let cool completely on rack before covering or cutting.
