  • 1 12 cups grated fresh carrots
  • 2 12 cups cake flour
  • 34 cup buttermilk
  • 2 teaspoons milk
  • 23 cup vegetable oil
  • 2 eggs
  • 1 12 cups sugar
  • 1 12 tablespoons cinnamon
  • 1 tablespoon vanilla extract
  • 1 lb butter (softened)
  • 1 lb cream cheese (room temp)
  • 4 14 cups confectioners' sugar
  • 2 teaspoons vanilla extract

    grease and flour two (2) 9 inch pans.

    sift all dry ingredients.

    add wet ingredients.

    mix on medium speed.

    add carrots.

    mix on high speed until all ingredients are incorporated.

    pour into greased and floured pans.

    bake at 300 for 45 mins.

    place butter, cream cheese and vanilla into bowl.

    slowly add sugar.
