- 2 cups sifted flour
- 2 teaspoons baking powder
- 1 12 teaspoons baking soda
- 1 teaspoon salt
- 2 12 teaspoons cinnamon
- 2 cups sugar
- 1 12 cups vegetable oil
- 4 large eggs
- 2 34 cups carrots, coarsely grated
- 1 (8 ounce) canunsweetened crushed pineapple, drained
- 1 cup walnuts, chopped
- 1 cup coconut, shredded
- 14 cup icing sugar
Directions

1Grease and line three 9-inch round baking tins.

2Sift together flour, baking powder, soda, salt and cinnamon.

3In a large bowl, blend together sugar, oil and eggs.

4Gradually add flour mixture to the sugar mixture, blending well.

5Tnen add the carrots, drained pineapple, nuts, and coconut; blend thoroughly.

6Turn into greased pans.

7Bake at 350F for 45 minutes and test for doneness.

8Cool a few minutes before removing from pans.
