  • 2 cups sifted flour
  • 2 teaspoons baking powder
  • 1 12 teaspoons baking soda
  • 1 teaspoon salt
  • 2 12 teaspoons cinnamon
  • 2 cups sugar
  • 1 12 cups vegetable oil
  • 4 large eggs
  • 2 34 cups carrots, coarsely grated
  • 1 (8 ounce) canunsweetened crushed pineapple, drained
  • 1 cup walnuts, chopped
  • 1 cup coconut, shredded
  • 14 cup icing sugar

Directions

    Grease and line three 9-inch round baking tins.

    Sift together flour, baking powder, soda, salt and cinnamon.

    In a large bowl, blend together sugar, oil and eggs.

    Gradually add flour mixture to the sugar mixture, blending well.

    Tnen add the carrots, drained pineapple, nuts, and coconut; blend thoroughly.

    Turn into greased pans.

    Bake at 350F for 45 minutes and test for doneness.

    Cool a few minutes before removing from pans.
