- 2 cups sugar
- 1 12 cups oil
- 4 eggs
- 2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1 12 cups raw carrots, grated
- 1 12 cups walnut pieces
Directions

1Mix sugar, oil and eggs.

2Sift flour, soda, salt, baking powder and cinnamon and add to the sugar mixture.

3Add the carrots and nuts.

4Bake at 325 for 30-40 minutes or until a toothpick comes out clean when poking in the center of the cake.

5I use Betty Crocker Whipped Cream Cheese frosting for this, but the Icing recipe is as follows: 1 box powdered sugar, 8 oz.

6cream cheese, 2 teaspoons vanilla, 1/2 stick butter.

7Cream all ingredients together and frost a completely cooled cake.
