  • 2 c. sugar
  • 1 1/4 c. Crisco oil
  • 4 eggs
  • 2 1/2 c. flour
  • 2 tsp. soda
  • 1 to 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 small can crushed pineapple, drained
  • 2 to 3 c. grated carrots
  • 1 c. chopped nuts

Directions

    Cream the sugar and oil.

    Beat in the eggs.

    Add the flour, soda, cinnamon and salt.

    Fold in the pineapple, carrots and nuts. Bake in a 9 x 13-inch pan at 350° for 40 to 60 minutes.
