- 3 c. grated carrots
- 2 c. sifted flour
- 2 c. sugar
- 2 tsp. baking soda
- 4 eggs
- 1 1/4 c. vegetable oil
- 1 tsp. salt
- 3 tsp. cinnamon
Directions

1Heat oven to 350°.

2Beat together eggs, sugar and oil.

3Add the carrots (the carrots may be grated in the blender or a meat grinder, but hand grating is the best and it usually takes a one pound package of carrots).

4add the flour, salt and cinnamon. Beat the mixture until frothy.

5Bake in 8 x 13-inch pan for 40 to 45 minutes.

6Frost with Cream Cheese Frosting.
