  • 1 c. vegetable oil
  • 4 eggs
  • 3 tsp. baking powder
  • 1 c. finely grated carrots
  • 2 tsp. cinnamon
  • 1 c. raisins
  • 2 c. sugar
  • 2 c. all-purpose flour
  • 1/2 tsp. soda
  • 1/8 tsp. salt
  • 1 tsp. vanilla
  • 1 c. chopped nuts

Directions

    Mix oil and sugar until well blended.

    Add eggs, one at a time. Sift flour, baking powder, soda and salt together.

    Stir into sugar, oil, egg mixture.

    Add remaining ingredients.

    Beat well. Bake in a round 2 1/2 x 10-inch tube pan or 4 x 12-inch loaf pan for 1 hour at 350°.
