- 1 1/2 c. cooking oil
- 2 c. sugar
- 4 eggs, beaten
- 2 c. self-rising flour
- 2 tsp. cinnamon
- 3 c. grated carrots
- 1 c. chopped pecans
- 1 small can crushed pineapple
Directions

1Beat oil and sugar well.

2Add eggs; beat well.

3Sift flour and cinnamon; blend with egg mixture.

4Fold in carrots, pineapple and nuts; place in a loaf pan.

5Bake at 350° for 1 hour.

6Bake 30 minutes in 2 layer pans.
