  • 1 1/4 c. cooking oil
  • 4 eggs, beaten after each egg
  • 2 c. flour
  • 2 tsp. soda
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 3 c. finely grated carrots
  • 1 c. nuts

    Combine first 3 ingredients, beating after each egg.

    Sift together dry ingredients.

    Bake at 350° in 4 layer pans or 1 tube pan for 1 hour.
