  • 3 c. sifted flour
  • 2 c. sugar
  • 1 tsp. soda
  • 1 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 tsp. cloves
  • 1/2 tsp. nutmeg
  • 1/2 tsp. allspice
  • 1 1/2 c. salad oil
  • 1 (7 oz.) can crushed pineapple
  • 3 eggs
  • 2 c. grated carrots
  • 1 c. broken pecans

    Sift first 8 ingredients together.

    Blend in salad oil, pineapple and eggs and beat 4 minutes.

    Fold in carrots and pecans.

    Turn into greased and floured 10-inch tube pan and bake 1 1/2 hours at 325°.
