- 1 c. white sugar
- 1 c. corn oil
- 3 eggs
- 1 1/3 c. flour
- 1 1/3 tsp. baking soda
- 1 1/3 tsp. baking powder
- 1 1/3 tsp. cinnamon
- 1/2 tsp. salt
- 2 c. grated raw carrot
- 1/2 c. crushed nuts (optional)
- 4 oz. cream cheese
- 2 Tbsp. butter or margarine
- 1 c. icing sugar (confectioners sugar)
- 1 tsp. vanilla extract
Directions

1Combine sugar, oil and eggs; beat well.

2Add the next 5 ingredients; beat well.

3Fold in carrots and nuts.

4Pour into a greased angel food cake pan.

5Bake at 300° for 60 minutes.

6Beat the cream cheese, butter, icing sugar and vanilla until creamy; ice the Carrot Cake when cool.
