  • 1 c. white sugar
  • 1 c. corn oil
  • 3 eggs
  • 1 1/3 c. flour
  • 1 1/3 tsp. baking soda
  • 1 1/3 tsp. baking powder
  • 1 1/3 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 c. grated raw carrot
  • 1/2 c. crushed nuts (optional)
  • 4 oz. cream cheese
  • 2 Tbsp. butter or margarine
  • 1 c. icing sugar (confectioners sugar)
  • 1 tsp. vanilla extract

Directions

    Combine sugar, oil and eggs; beat well.

    Add the next 5 ingredients; beat well.

    Fold in carrots and nuts.

    Pour into a greased angel food cake pan.

    Bake at 300° for 60 minutes.

    Beat the cream cheese, butter, icing sugar and vanilla until creamy; ice the Carrot Cake when cool.
