  • 2 c. cake flour
  • 2 c. sugar
  • 4 eggs
  • 3 c. grated carrots
  • 1 tsp. vanilla
  • 1 1/2 c. vegetable oil
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 2 tsp. baking soda

Directions

    Mix all dry ingredients together.

    Add oil, eggs and vanilla and blend well.

    Bake in three nine-inch pans (grease and flour each pan) at 350° for 30 minutes.
