  • 2 c. flour
  • 2 tsp. soda
  • 2 tsp. cinnamon
  • 1 tsp. pumpkin pie spice
  • 2 c. sugar
  • 1 1/2 c. vegetable oil
  • 4 eggs
  • 3 c. shredded carrots

Directions

    Cream together sugar, salad oil and eggs.

    Add flour, soda, cinnamon and salt.

    Mix into creamed mixture.

    Add grated carrots, pecan nuts and coconut.

    Bake at 350° for 1 hour or until when toothpick is placed into cake it comes out clean.
