- 3 tsp. baking powder
- 1 1/2 tsp. baking soda
- 3 tsp. cinnamon
- 2 c. oil
- 3 c. carrots, grated
- 1 c. pecans or walnuts, chopped
- 1 c. pineapple, drained
- 4 eggs, beaten
- 1 c. sugar
Directions

1Sift all dry ingredients together.

2Blend sugar and oil; add eggs.

3Fold in dry ingredients and mix well.

4Add drained pineapple and carrots and mix.

5Fold in walnuts or pecans.

6Heat oven to 350° and bake for 35 minutes.
