- 2 c. sugar
- 4 eggs, unbeaten
- 1 1/2 c. oil
- 2 c. flour
- 2 tsp. cinnamon
- 2 tsp. baking soda (scant)
- 1 tsp. salt
- 3 c. grated carrots
- 1 c. chopped nuts
Directions

1Beat sugar, eggs and oil together.

2Sift flour, baking soda, cinnamon, baking powder and salt together in another bowl.

3Add to first mixture and beat very well by hand.

4Add carrots and nuts; mix well.

5Pour into a 9 x 13-inch pan.

6Bake for 1/2 hour at 300°, then increase the temperature to 325° for another 35 minutes.
