- 2 c. sugar
- 1 1/2 c. corn oil or Wesson oil
- 4 eggs
- 2 c. self-rising flour
- 1 tsp. cinnamon
- 1 tsp. vanilla
- 3 c. grated carrots
- 1 c. chopped walnuts
Directions

1Sift flour, sugar and cinnamon into large mixing bowl.

2Add vanilla and oil, then one egg at a time.

3With electric mixer, beat until smooth.

4Fold in nuts and bake in ungreased tube cake pan at 350° for about 1 1/2 hours.

5Leave in pan until cool.

6This cake can be used with or without being iced.
