  • 2 c. sugar
  • 1 1/2 c. corn oil or Wesson oil
  • 4 eggs
  • 2 c. self-rising flour
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 3 c. grated carrots
  • 1 c. chopped walnuts

Directions

    Sift flour, sugar and cinnamon into large mixing bowl.

    Add vanilla and oil, then one egg at a time.

    With electric mixer, beat until smooth.

    Fold in nuts and bake in ungreased tube cake pan at 350° for about 1 1/2 hours.

    Leave in pan until cool.

    This cake can be used with or without being iced.
