  • 4 eggs
  • 1 c. vegetable oil
  • 2 c. flour
  • 2 c. sugar
  • 2 tsp. cinnamon
  • 2 tsp. baking soda
  • 4 c. (approximately 1 lb.) grated carrots
  • 2/3 c. chopped nuts
  • 3 8 oz. pkg. cream cheese, slightly softened
  • 3 c. sifted confectioners sugar

    Preheat oven to 350 degrees.

    Grease and flour two 9 inch round pans or spray with non-stick cooking spray. (If you are using a non-stick pan you will not need to do this.)
