- 2 c. flour
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 1 1/2 c. vegetable oil
- 1 tsp. vanilla
- 1 c. well drained pineapple
- 1 c. shredded coconut
- 2 c. sugar
- 1 tsp. baking soda
- 3 eggs
- 2 c. finely grated carrots
- 1 c. nuts, divided
Directions

1In a mixing bowl, combine dry ingredients.

2Add eggs, oil, carrots and vanilla.

3Stir in pineapple, coconut and 1/2 cup nuts. Pour in a greased baking dish (9 x 13 x 2-inch).

4Bake at 350° for 50 to 60 minutes or until done; cool.

5Combine frosting ingredients.
