- 2 c. flour
- 1 1/2 tsp. soda
- 2 tsp. baking powder
- 1 tsp. salt
- 2 tsp. cinnamon
- 2 c. sugar
- 1 1/2 c. oil
- 4 eggs
- 2 c. carrots, grated
- 1 (8 3/4 oz.) can crushed pineapple, drained
- 1/2 c. nuts, chopped
Directions

1Sift flour, soda, baking powder, salt and cinnamon together. Add sugar, oil and eggs.

2Mix well.

3Add carrots, pineapple and nuts.

4Blend.

5Turn into 3 9-inch round pans lined with waxed paper.

6Bake at 350° for 35 to 40 minutes.

7Cool a few minutes in pans, then turn out and cool on wire racks.

8Cake will be very brown as it bakes.

10layers and spread top and sides with Cream Cheese frosting.
