  • 2 c. sugar
  • 3 c. grated carrots
  • 2 c. chopped pecans
  • 2 tsp. cinnamon
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 4 eggs
  • 1 1/2 c. oil

Directions

    Combine all ingredients (except carrots and pecans).

    Beat until smooth.

    Fold by hand in carrots and pecans.

    Bake in greased and floured round cake pans at 350° for about 35 minutes.
