- 4 eggs, beaten
- 2 c. sugar
- 1 1/2 c. cooking oil
- 3 c. self-rising flour
- 1 tsp. soda
- 2 tsp. cinnamon or cloves
- 2 c. finely grated carrots
- 1 c. chopped pecans
- 1 large cream cheese
- 1 box powdered sugar
- 2 tsp. vanilla
Directions

1Blend eggs, sugar and oil.

2Sift flour with soda and cinnamon. Add to egg mixture.

3Fold in carrots and pecans.

4Place in three 9-inch greased pans.

5Bake at 350° for 25 or 30 minutes.

6Cool layers before icing.

7Blend powdered sugar, cream cheese and vanilla.

8Spread between layers.
