- 3/4 c. salad oil
- 1 1/2 c. flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 1 c. grated carrots
- 2 eggs
- 1/2 c. chopped nuts
Directions

1Mix sugar and oil, then sifted dry ingredients.

2Add carrots and eggs, one at a time.

3Beat well.

4Add nuts last.

5Blend well. Bake in medium loaf pan at 375° for 55 minutes.
