  • 1 c. sugar
  • 3/4 c. salad oil
  • 1 1/2 c. flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 c. grated carrots
  • 2 eggs
  • 1/2 c. chopped nuts

    Mix sugar and oil, then sifted dry ingredients.

    Add carrots and eggs, one at a time.

    Beat well.

    Add nuts last.

    Blend well. Bake in medium loaf pan at 375° for 55 minutes.
