  • 2 c. flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 1/2 c. corn oil
  • 2 c. sugar
  • 2 c. grated carrots (can substitute 3 small jars baby carrots)
  • 1 tsp. cinnamon
  • 4 eggs
  • nuts (optional)

Directions

    Sift together dry ingredients except sugar. Combine corn oil and sugar. Add eggs, one at a time, beating after each addition. Gradually add dry ingredients. Mix well. Add carrots. Pour into three 8-inch greased pans. Bake 30 to 35 minutes at 350°.
