  • 3 eggs
  • 2 c. flour, sifted
  • 2 c. sugar
  • 1 1/4 c. vegetable oil
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 2 tsp. baking soda
  • 2 tsp. vanilla
  • 1 c. shredded coconut
  • 1 c. walnuts, chopped
  • 1 c. crushed pineapple, drained
  • 2 c. raw carrots, shredded

    Beat eggs well.

    Then add the next 7 ingredients and beat until smooth.

    Stir in the coconut, nuts, pineapple and carrots with a mixing spoon.

    Pour into a greased 9 x 13-inch cake pan. Bake at 350° for 50 minutes.
