- 2 c. flour, sifted
- 2 c. sugar
- 1 1/4 c. vegetable oil
- 1 tsp. cinnamon
- 1 tsp. salt
- 2 tsp. baking soda
- 2 tsp. vanilla
- 1 c. shredded coconut
- 1 c. walnuts, chopped
- 1 c. crushed pineapple, drained
- 2 c. raw carrots, shredded
Directions

1Beat eggs well.

2Then add the next 7 ingredients and beat until smooth.

3Stir in the coconut, nuts, pineapple and carrots with a mixing spoon.

4Pour into a greased 9 x 13-inch cake pan. Bake at 350° for 50 minutes.
