- 1 1/4 c. flour
- 1/2 tsp. salt
- 1/2 tsp. soda
- 1/2 to 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 tsp. baking powder
- 1 c. grated carrots
- 1 c. pecans
Directions

1Beat whites of eggs until stiff and fold into mixture of remaining ingredients.

2Bake in a tube pan.

3Do not grease pan. Cover bottom with wax paper.

4Bake at 325° for one hour and 20 minutes.
