- 2 1/3 c. cake flour
- 2 c. sugar
- 2 tsp. baking powder
- 1 tsp. baking soda
- 2 tsp. ground cinnamon
- 1 tsp. salt
- 1 1/4 c. salad oil
- 4 eggs
- 2 tsp. vanilla
- 2 c. grated carrots
- 1 c. crushed pineapple, drained
- 1 c. pecans, chopped
Directions

1Mix together all dry ingredients and sift.

2Add oil and beat at medium speed for 2 minutes.

3Add eggs and vanilla.

4Mix well. At low speed add carrots, pineapple and pecans.

5Bake at 325° for 45 minutes.

6Cool.
