- 3 eggs
- 3/4 c. buttermilk
- 2 c. sugar
- 2 tsp. ground cinnamon
- 2 tsp. vanilla
- 1 c. raisins
- 8 oz. crushed pineapple, undrained
- 3/4 c. vegetable oil
- 2 c. all-purpose flour
- 2 tsp. baking soda
- 1/2 tsp. salt
- 2 c. finely shredded carrots
- 1 c. chopped walnuts
- 1 c. flaked coconut
Directions

1In a large mixing bowl, beat eggs, oil and buttermilk. Combine flour, sugar, baking soda, cinnamon and salt; add to egg mixture and mix well.

2Stir in vanilla, carrots, raisins, pineapple, walnuts and coconut; mix well.

3Pour into a greased 13 x 9 x 2-inch baking pan.

4Bake at 350° for 45 to 50 minutes or until cake tests done.

5Cool.
