- 2 c. flour
- 2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1 1/2 tsp. salt
- 2 tsp. cinnamon
- 2 c. sugar
- 1/2 c. chopped walnuts
- 1 c. coconut
- 1 1/2 c. salad oil
- 4 eggs
- 2 c. shredded carrots
- 1 c. crushed pineapple, drained
Directions

1Mix together flour, baking powder, baking soda, salt, cinnamon and sugar.

2Stir in walnuts and coconut.

3In another bowl, combine oil and eggs and beat 1 minute.

4Stir in carrots and pineapple. Combine the two mixtures, wet and dry.

5Pour into greased and floured 9 x 13-inch pan.

6Bake at 350° for 45 minutes.
